2020 Recap +2021 Goals

I don’t know if this post is as much of a “happy New Year!” as much as it is an “OMG, we survived.” 2020 wasn’t exactly the year any of us planned on, and let’s be honest… 2021 is going to have its own challenges. Still, here are some positives from my 2020 journey and, more importantly, my goals and intentions for the year ahead.

Sweet + Spicy Cornbread Muffins

This sweet and spicy cornbread has a touch of honey and is infused with jalapeño butter, giving it just the right amount of spice. Corn Cookies probably don’t sound all that appealing, and I’ll admit that when I first heard that Trader Joe’s created a Corn Cookie mix, I was skeptical. But when I played around with cornmeal in my cookie dough, the outcome was these ridiculously chewy, buttery, delicious cookies that land somewhere between sweet honey cornbread and a chewy sugar cookie. Fruit Salad With Mint Dressing

Let’s be honest, fruit salad is boring. Most of the time, it’s not even salad… it’s just chopped up fruit thrown in a bowl. So when my dad visited for Father’s Day a few years ago and said he was cutting back carbs and requested a fruit salad with his Father’s Day brunch, I wanted to find a way to zhuzh it up a little. I know they sell pre-packaged sponges for this dessert, and maybe it’s because drop biscuits slathered in butter and honey were a dinner-time staple growing up, but I’ve always preferred a biscuit-based shortcake to the store-bought cakes. Addressing White Privilege

I know that the phrase “white privilege” can be triggering for a lot of white folks, but we have to be better. That requires acknowledging and understanding our privilege. It requires setting aside egos and feelings. It requires listening and learning how to be an ally, not just doing what we think it means to be one. It requires unlearning. It requires hearing from the voices that are too often unheard.
