Corn Cookies probably don’t sound all that appealing, and I’ll admit that when I first heard that Trader Joe’s created a Corn Cookie mix, I was skeptical. But when I played around with cornmeal in my cookie dough, the outcome was these ridiculously chewy, buttery, delicious cookies that land somewhere between sweet honey cornbread and a chewy sugar cookie. Make these. You’ll thank me later.
I haven’t written anything about teaching in a long time. I had a lot to focus on the last few months, and sharing teacher content was the furthest thing from my mind. In fact, the last teacher post in my drafts is about how I grade and lesson plan during the day to leave by 4pm. That seems like a lifetime ago. This year was hard. And the pandemic wasn’t even the hardest part.
Let’s be honest, fruit salad is boring. Most of the time, it’s not even salad… it’s just chopped up fruit thrown in a bowl. So when my dad visited for Father’s Day a few years ago and said he was cutting back carbs and requested a fruit salad with his Father’s Day brunch, I wanted to find a way to zhuzh it up a little. What I came up with was this sweet, citrusy, minty dressing that took my fruit salad from a sad salad to an exciting side.
I’ve tried a number of things to sleep better: melatonin, ZzzQuil, more exercise… the list goes on. Finally, after years of trial and error and nights of restless sleep, I found a few things that work for me. If you’re a “bad sleeper” like I am, hopefully some of these methods can offer you a better night’s rest too.
Much like a hot mugful of coffee gets me out of bed in the morning, a chilled glass of cold brew can keep me from crashing back into bed during that midday slump. The best part about this cold brew? You can literally make it in your sleep.
The most patriotic thing one can do is to look at their country and see its flaws and consider how we can help it do better. The more I educate myself and come to terms with this nation’s past and understand its present, the more I realize how deeply imperfect this country is, and the more I realize that the only way for all of us to move forward is to have an open mind and heart, a lot of empathy, and an earnest desire to do better. I’ve done a lot of thinking and growing, and now, I guess I’m asking America to do the same. Because, as it turns out, this is what it means to be patriotic.
I don’t know who needs to hear this, but you can absolutely have apple pie for breakfast. My Apple Pie Cinnamon Roll is the love child of one of my favorite desserts and a favorite breakfast treat. It’s one part fluffy cinnamon roll, one part Dutch apple pie, and all mouthwateringly delicious.
